This project deals with the possibility to increase the content of omega-3 fatty acids in eggs, comparing the addition of sunflower oil (4% linolenic acid and 57% linoleic acid) or linseed oil (35% linolenic acid and 30% linoleic acid) to feed.
Moreover, we studied how could affect these high changes in the unsaturation levels of the feed on alpha-tocopherol deposit in the egg, since it is the natural antioxidant acting to protect these fatty acids against oxidation. From these results optimized procedures were established for feed supplementation and for the periods of administration, in order to reach the maximum enrichment both in tocopherol and polyunsaturated fatty acids.
