He has been Full Professor at the Nutrition and Food Science Department until September 2016, when he has retired.

He is PhD in Pharmacy (December 1980) and his teaching has focused on the degrees of Pharmacy, Food technology , and Human Nutrition and Dietetics, as well as several Master studies. His main fields have been teaching Chemistry and Food Analysis and Food Quality.

He has developed his research for over 30 years in the field of lipids in food and feed , and he has been the coordinator of the research group LiBiFOOD until September 2016. His main research line has been the study of the influence of feed quality on the lipid fraction of foods of animal origin. More specifically he has been dealing with the enrichment in polyunsaturated acids of pork , chicken, rabbit and eggs, through the use of polyunsaturated oils in feed.

His most recent research has focused on the use of by-products of the food chain as lipid ingredients in feed, to reduce production costs and avoid environmental problems involved in their treatment as waste. These studies deal with the influence of these by-products on meat fatty acid composition.

The influence of feed on meat tocopherol content and on the development of meat lipid oxidation have also been the focus of this research because they might cause of problems in the acceptance by the consumer .

Other research areas in which he has also participated are:

a) optimization of the use of ingredients and additives for the stabilization of oxidative fatty foods;

b) development methodologies and models for authentication of foods based on the use of lipid parameters and chemometrics.

He has been the Project Leader of  7 competitive projects (of 3-4 years each), funded by the Spanish and European administration and has participated in more than 11 other national and international research projects and in more than 30 university-industry agreements.

He participated in the publication of more than 90 articles in scientific journals indexed (SCI) and located mostly in the 1st quartile in relation to their impact index. He also participated in the publication of over 50 monographs, reports, popular articles, books and book chapters .
